Here is spicy & yummy green Aloo vada which I prepared for my first Ramadan.This dish is perfect for those who don’t eat onion. The filling in this vada is different from other vada, because I added green spices in it which gives very unique flavour to it. Follow my easy recipe with step by step pictures.

Ingredients for stuffing:
Ingredients | Quantity |
Potato | 2 cup mashed |
Mustard Seeds | 1/4 teaspoon |
Kalunji | 1/4 teaspoon |
Cumin seeds | 1/4 teaspoon |
Green chilli | 3 |
Garlic | 5 cloves |
Coriander Leaves | 1/2 bunch |
Salt | as needed |
Turmeric powder | 1/4 teaspoon |
Ingredients for batter:
Ingredients | Quantity |
Bengal gram flour | 1 & 1/2 cup |
Cooking soda | a pinch |
Red chilli powder | 1/4 teaspoon |
Salt | as needed |
Method:
1. Boil, peel and mash the potato.
2. Grind garlic, green chilli and coriander leaves together to make paste. Heat the wok with oil and temper with mustard seeds, kalunji and cumin seeds. When it cracks, add paste into it. Add turmeric powder and salt and fry it for about 1 minutes.
3.Then add potato into wok and mix it well. Now the filling is ready. Make small ping pong size balls from filling and keep it aside.
4. Take a bowl, add red chilli powder, soda and salt. Add small amount of water to make batter. Batter consistency should not be thick nor thin.Take one ball and dip in batter to coat from all the sides.
5. Heat the wok/kadhai with oil and deep fry the well coated balls from all the sides until golden brown . Green aloo vada is ready and serve hot with green chutney or with your favourite sauce.
