Kheer Recipe | Delicious Payasam Recipe | Rice Pudding

It is a kind of a tradition in every indian house to have something sweet after having dinner or lunch. There has to be something sweet to enjoy.

Kheer being one of my favourites as a dessert. If you have loved the Phirni recipe I shared previously on the blog, I am sure you are going to love this as well.

Follow this simple recipe to prepare this delicious Kheer at home.

Preparation Time: 5 Minutes

Cooking Time: 20-25 Minutes

Ingredients Quantity
Milk 3 litre
Rice 1 cup
Khoya 1/2 kg
Pistachio 1/4 cup
Almond 1/4 cup
Cashew nuts 1/4 cup
Cardamom green 1
Sugar 2 cup
Saffron 1/2 teaspoon
Vanilla custard powder 5 teaspoon

Method:

1. Boil the milk in a heavy bottomed pan and add saffron, chopped almond, cashew nuts and pistachio.

2. Wash, clean and soak the rice for 1 hour and grind it along with cardamom green and 1/2 cup of water to make paste. When the milk starts boiling, add ground paste into the milk. While adding ground paste keep mixing it so that you can get smoothest kheer (Keep mixing it with one hand while pour the ground paste otherwise the ground rice will not be able to mix with the milk properly). Dissolve vanilla custard powder in 1/4 cup of cold water and add it into the milk while mixing it with the other hand. Add sugar and cook it on medium flame with continuously mixing with spatula.

3. Add khoya and mix it well. When you get the consistency of kheer switch off the flame and pour it in a serving bowl and garnish with chopped dry fruits. Let it cool by itself and enjoy this delicious kheer with your family.
