
Kulfi is a frozen dessert made from milk. It is commonly prepared by North Indian states. Kulfi is not an Ice-Cream, Lots of thickened milk, Dry fruits and sugar frozen to take you to a comfort zone in hot weather. It is perfect for any day but is like heaven on a summer day.You may also add different flavours to this Kulfi like pistachio, mango, chocolate etc.

| Ingredients | Quantity |
| Milk | 1 litre |
| Saffron | few strands |
| Almonds | 10-15 no’s |
| Cashew nuts | 10 no’s |
| Coconut grated | 3 teaspoon |
| Sugar | 7 teaspoon |
| Corn flour | 1 teaspoon |
Method:
1. Put the milk into a wide pan and bring to boil over high heat. Now slow the heat and cook the milk, stirring constantly, until it has thickened and reduced to about 13/4th cups. (This process will take about 25-30 minutes)

2. Now grind almonds, cashew nuts, grated coconut and saffron.(As shown below in picture)

3. Now add sugar and mix well. Dissolve separately 1 teaspoon corn flour in 1/2 cup of milk and add this paste, grind dry fruits into reduced milk. Cook for another 1-2 minutes. Stir well.

4. Pour the mixture into Kulfi moulds or small ramekins, distributing evenly. I used the cases, I had bought for preparing muffins. You can also use bowls or containers. Cover with plastic wrap or foil and freeze until set, about 8 hours or overnight.

5. To serve, remove the Kulfi from the molds by running a sharp knife and top with melted chocolate.
