This was my first time at baking cake so I decided to try it with a simple recipe for cake. I prepared this eggless vanilla cake first time and it turned out perfect. It is soft, sponge and delicious too. I also used some chocolate toppings, which gave it a perfect taste. If you are new to baking, I would suggest you all to try with it.

Cooking Time: 30 Minutes
Ingredients | Quantity |
All purpose flour | 1 1/2 cup |
Corn flour | 1 teaspoon |
Curd | 1 cup |
Sugar | 3/4 cup |
Baking powder | 1 teaspoon |
Baking soda | 1/2 teaspoon |
Oil | 1/2 cup |
Vanilla essence | 1 teaspoon |
Method:
1. Sieve maida twice and add corn flour and mix well.
2. Mix Curd and sugar into bowl. Now add baking powder and baking soda. Mix well and leave it for 1-2 minutes, you will see bubbles appearing.
3. Then add oil, vanilla essence and mix well. Now add maida in portions at a time otherwise it wont be a smooth mixture, then blend with wet ingredients.
4. Beat well with a whisk until creamy and thick as shown below. Now grease the cake mould with oil.
5. Preheat oven to 180 deg C . Pour batter into cake mould.
6. Bake in preheated oven at 180 degree C for 30 minutes. You can check it with by inserting a fork if it needs some extra time to bake, if the fork comes out clean, it means your cake is ready. If you like chocolate then top it with melted chocolate.
