Ever since I posted the recipe of the Black Forest Pastry, I have been getting requests from all corners of the world to post more such recipes, though I still consider myself a newbie at baking, it is a better opportunity to learn and hone my skills. So, today’s recipe is Raspberry banana muffin, which is equally good as the black forest pastry.

Ingredients | Quantity |
All purpose flour | 1-1/2 cup |
Banana | 1 |
Baking powder | 1 teaspoon |
Salt | to taste |
Milk | 1/2 cup |
Sugar | 1/4 cup |
Egg | 2 |
Butter | 1/4 cup |
Fruit jam / Raspberry jam | 2 tablespoon |
Raspberry essence | 1 teaspoon |
Vanilla essence | 1 teaspoon |
Method:
1. Peel off the skin of banana and grind it in a grinder. Sieve the flour, baking powder and salt in a bowl.
2. Combine egg, milk, butter, sugar, ground banana, raspberry jam, raspberry essence, into another bowl and mix it well till sugar dissolves completely. Add liquid ingredients to dry ingredients and mix it well.
3. Prepare muffin mould and pour 3 tablespoon batter into each mould.
4. Bake it in a pre-heated oven at 170 C for 30 minutes. Cool it at room temperature for 30 minutes.
5. Combine cream, icing sugar and vanilla essence into a bowl and beat it until creams are soft and fluffy. Fill the whipping cream in a piping bag and decorate the muffins.
