Here is the recipe of Aloo Vada, the spicy goodness of potatoes wrapped into gram flour,

Ingredients for the mixture:
Ingredients | Quantity |
Potato, Boiled peeled and mashed | 1 cup |
Turmeric powder | 1/2 teaspoon |
Red chilly powder | 1/2 teaspoon |
Salt | to taste |
Cumin powder- zeera | 1/2 teaspoon |
Green chilly- hari mirch | 4-5 |
Coriander leaves | 4 tbsp |
Garlic paste | 1 teaspoon |
Asafoetida- hing | 1/8 teaspoon |
Ingredients for coating the potato balls:
Chickpea flour- besan | 1 cup |
Salt | to taste |
Red chilly powder | 1/2 teaspoon |
Turmeric powder | 1/2 teaspoon |
Fennel seeds- saunf | 1/2 teaspoon |
Baking powder | 1/2 teaspoon |
Water | 3/4 cup |
Cumin seeds- zeera | 1/2 teaspoon |
Method:
1. Take the coriander leaves, green chilly and garlic paste in a grinder and grind it to make fine paste. Don’t add water while grinding the mixture.
2. In a bowl, add mashed potatoes, cumin powder, salt, asafetida, turmeric powder, red chilly powder, ground chilly paste and lemon juice.
3. Mix it well, divide the mixture into 10-12 equal portions. Take one portion of the mixture and roll it in between your palms to make the round shape balls.
4. In another bowl, add chickpea flour, turmeric powder, red chilly powder, salt, cumin seeds, baking powder and fennel seeds. Mix it well, add water and make the lumps free batter to coat the balls.
5. Now dip the round shape balls in the batter, so that the balls can coat the batter from all the sides. Put the coated balls in the hot oil and deep fry it on a medium flame till light golden in the color from all the sides.
6. Take out the fried vada on the tissue paper to get rid of the extra oil. Do the same with the rest of the balls.
