Vegetable Coriander Bhaat Recipe

Here is a recipe of super delicious and super easy one pot meal, the Coriander Bhaat, if you loved my previous one pot recipes, you will surely love this one as well. You can prepare it for yourself for lunch or for the entire family on a lazy holiday when you do not want to spend a lot of time in the kitchen.

Ingredients Quantity
Rice 2 cup
Cumin seeds 1 teaspoon
Bay leaf 1
Cardamom brown 1
Cinnamon stick 1
Cloves 3-4
Onion 1
Potato 2
Carrot 1/2 cup diced
Beans 1/4 cup chopped
Green peas 1/4 cup
Turmeric powder 1/2 teaspoon
Salt to taste
Cardamom green 2
Black pepper 1/2 teaspoon
Vegetable oil 4 tablespoon

Ingredients to grind for bhaat:

Coriander leaves 1 bunch
Green chilly 5-6
Garlic 6 flakes
Ginger 1/2 inch
Fennel seeds/ saunf 1 teaspoon
Cumin seeds 1 teaspoon
Coconut grated 3 tablespoon

Method:

1. Grind together all the ingredients given in table “  Ingredients to grind for bhaat “. You can add 2-3 tablespoon of water to make a fine paste. Keep it aside. Clean, wash and soak the rice for half an hour.

2. Heat the pressure cooker with oil.

3. Temper with cumin seeds, bay leaf, cardamom brown & green, cloves, black pepper and cinnamon stick. When cumin seeds starts crackle, add chopped onion.

4. Fry onions till light golden in color. Then add ground chilly-coriander spices. Cook the spices on low flame for 2 minutes.

5. Add in turmeric powder, potato, carrot, beans and peas. Cook the veggies on medium to low heat for another 4-5 minutes till oil shows separately. Keep stirring in between while cooking the veggies to prevent from burning.

6. Add soaked rice into the cooker.

7. Add salt and water. Mix it well. Close the lid and pressure cook it on high heat for one whistle, then reduce the heat and cook for another 8-10 minutes. Switch off the flame. let the pressure settles down, open cooker, delicious vegetable coriander bhaat is ready to serve. Serve hot with ghee, curd, pickle and salads.
