Someone messages me the the other day and asked me for the recipe of khichdi, I was so surprised that in the last two years, I haven’t shared the most obvious recipe in easy cooking.
A chunk of ER readers are the ones who live alone and either a student or have a regular job. It is quite though to for them to make time to try all the delightful recipes. But a delicious food doesn’t have to be tough to prepare.
This khichdi is equally delicious when you are super hungry and have got few minutes at hand. Try this simple recipe to prepare veg khichdi.

Coriander leaves

Rice | 2 cup |
Green Peas | 1 cup |
Potato | 2 |
Onion | 1 |
Cumin seeds | 1 teaspoon |
Black pepper | 1/4 teaspoon |
Cardamom brown | 1 |
Cardamom green | 2 |
Cloves | 3 |
Bay leaf | 2-3 |
Cinnamon stick | 1 inch stick |
Green chilly | 6 |
Garlic | 8-10 cloves |
Coriander leaves | 1 bunch |
Fenugreek leaves | 1/2 bunch |
Tomato | 2 |
Salt | as needed |
Method:
1. Clean, wash and soak the rice for half an hour. Peel off the skin of potato and cut it into cubes. Heat the oil into wok and add chopped onion, cumin seeds, cardamom green & brown, cloves, black pepper, cinnamon stick and bay leaf. Fry it until onions are light golden brown in color.
2. Now add cubed potato into wok and fry it for 2-3 minutes. Grind coriander leaves, green chilli and garlic together to make paste. Add ground paste into wok and cook the spices for 1-2 minutes on medium flame.
3. Now add chopped tomato, green peas, soaked rice, chopped fenugreek and coriander leaves, salt and 2 glass of water. Mix it well and cook the rice on slow heat for about 10-12 minutes.
4. Mixed vegetable khichdi is ready, serve hot with salad and pickle.
