Chicken Kolhapuri Recipe

I have been following a strict diet these days, and the only day I am allowed to take cheat meals, is the weekends, Not as rich as this one though, but I was forced to prepare something delicious this weekend and I ended up making this.

But I am glad I made it, because, it made everyone happy, including me, and a filled tummy is more important than a flat tummy. :-).

Anyway, sorry for the low quality of the photos as I used my Smartphone’s Camera. I think I should carry my gear even when I am visiting a relative, who knows when the inspiration strikes?

Okay, enough jokes now, I’ll leave you with the step-by-step recipe for this Deliciously amazing Kolhapuri Chicken. I am sure you’ll love it.

Preparation Time: 10 Minutes

Cooking Time: 25-30 Minutes

Ingredients Quantity
Chicken 1/2 kg
Red chilli powder 1/2 teaspoon
Salt a small pinch
Lemon juice 1 teaspoon
Ginger-garlic paste 1 teaspoon

Ingredients for Curry:

Cumin seeds 1 tsp
Cardamom green 1
Bay leaf 2-3
Cloves 3
Mace powder (Javitri) / Whole Mace 1/4 tsp
Sesame seeds 2 tsp
Onion 1
Tomato puree 2 cup
Coriander seeds 2 tsp
Red chilli powder 1 tsp
Garam masala powder 1 tsp
Salt to taste
Cream 1/2 cup
Garlic (Chopped) 6 cloves
Fenugreek Leaves 1 tsp
Oil 4 tbsp.

Method:

1. Wash, clean and marinate chicken with the spices, given under table “ Ingredients for marinating “. Mix it well and keep it aside for 2 hours. Heat the pan with oil and temper with cumin seeds, cardamom green, cloves, bay leaf and mace.

2. Then add sesame seeds, coriander seeds and chopped garlic and saute for a minute. Add onion and cook for 1-2 minutes until onions are translucent. Let it cool and grind it along with some water to make fine paste.

3. Grind tomato to make puree. Heat the pan with oil and add ground paste and tomato puree.

4.  Add red chilli powder, salt and garam masala powder to pan. Cook it on slow heat till oil shows separately. Add fenugreek leaves and mix well.

5. Heat another pan with oil and fry marinate chicken pieces. Add fried chicken pieces to the gravy along with a cup of water.

6. Add cream and cook covered on slow heat for 6-7 minutes until chicken cooked properly.

7. Garnish with some butter and enjoy this delicious and mouth-watering chicken kolhapuri with butter naan.
