Ingredients | Quantity |
Rice | 2 cup |
Peanut | 1 cup |
Onion | 1 |
Mustard seeds | 1/2 teaspoon |
Red chilli dry | 3-4 no’s |
Garlic | 8-10 cloves |
Coconut grated | 1/4 cup |
Salt | as needed |
Oil | 4 teaspoon |
Method:
1. Wash and cook the rice properly. ( You can also use leftover rice for this recipe)
2. Dry roast the red chilli and garlic on tawa or pan till nice aroma comes and lastly add coconut. ( coconut burns very quick so be careful while roasting )
3. Grind the roasted ingredients coarsely. ( Don’t add water while grinding)
4. Heat the wok with oil and saute with mustards seeds then add onion. Fry it for about 30 seconds then add peanut.
5. Roast the peanut on slow heat till golden brown in the color. Now add cooked rice.
6. Add ground ingredients and mix it well. Cook for about 2-3 minutes, peanut rice is ready and serve hot with your favourite raita.
