Chai and Pakore make an awesome combo for an evening snack. It is quite common in every household. I had the filling left from Mixed Veg Sandwich and used it to prepare Vada, which is a type of Pakora you would never want to miss.
This was the first time I tried anything like this but I am going to prepare it again for sure. You can follow the easy and simple recipe to prepare this Mixed Veg Vada at home.

Ingredients For Filling:

Carrot | 1 |
French beans | 1/2 cup |
Green peas | 1/4 cup |
Salt | as needed |
Ginger (grated) | 1 teaspoon |
Garlic (grated) | 1 teaspoon |
Cumin seeds | 1/2 teaspoon |
Onion | 1 |
Red chilli powder | 1 teaspoon |
Garam masala powder | 1/2 teaspoon |
Coriander leaves (chopped) | 1/4 cup |
Ingredients For Batter:

Chickpea flour | 2 cup |
Red chilli powder | 1 teaspoon |
Salt | as needed |
Oil | for deep frying |
Method:
1.Wash, clean and chop all the vegetables into small pieces as shown below in the picture. Take vegetables into pressure cooker and cook it for about 4-5 whistle.
2.Now mash the cooked vegetable with masher.
3.Heat the oil in a wok and sauté with grated ginger, garlic and cumin seeds. Add in onion and cook it until light golden in color.
4.Add in red chilli powder, salt, garam masala powder and 1/4 cup water. Cook the spices until oil shows separately. Add in mashed vegetable,coriander leaves and mix it well.
5.Make small size ball from the mixture as shown below in the picture. In a medium bowl, add chickpea flour, red chilli powder, salt and 1/2 cup water to make batter. Batter consistency should be like kheer consistency.
6.Dip balls into batter to coat from all the sides. Heat the oil in a wok and deep fry the balls until golden and crisp.
7. Drain it on tissue paper to absorbs extra oil. Mixed vegetable vada is ready, serve hot with your favourite sauce.
