
Potato with tomato Sevai makes for a light, filling and quick-fix breakfast meal. Sevai is a type of rice noodles popular in South India.
You can add any vegetables, green peas, paneer, cheese according to your taste. But I prepared in a simple way, just took tomato and potato. I love the combo of both.

| Ingredients | Quantity | 
| Moti Sevai / Vermicelli | 100 gram | 
| Potato | 1 medium size | 
| Onion | 1 medium size | 
| Tomato | 1 medium size | 
| Green chillies | 2 | 
| Red chilli powder | 1/4 teaspoon | 
| Carom seeds/ Ajwain | 1/4 teaspoon | 
| Salt | To taste | 
Method:
1. Take Vermicelli as shown below. Heat oil in a pan, add Carom seeds and sauté for a minute.

2. Now add Chopped onion and green chillies, fry till onions are translucent. Then add diced potato.

3. Now add tomato and salt. Cook covered on slow heat without water for 5 minutes. Then add 2 cup water and red chilli powder.

4. Add sevai into pan. Cook covered on slow heat for another 5 minutes or till sevai get soft and properly cooked. Garnish with Coriander leaves. Serve hot.
