Mango Muffins Recipe

Mango Muffins are a unique, sweet, yummy, rich and delicious way to start any day. The walnuts are delicious in the muffins and they add amazing texture. Follow my easy recipe of mango muffins with step by step pictures.

Ingredients Quantity
Flour 1 & 1/2 cup
Baking Powder 1 teaspoon
Baking Soda 1/4 teaspoon
Sugar Powdered 3/4  cup
Mango Pulp 1 cup
Butter 1/4 cup
Orange essence 1 teaspoon
Currants/ kishmish 1/4 cup
Walnut/ Akrot 1/4 cup

Method:

1. Sieve all purpose flour in a bowl and add baking soda and baking powder. Mix it well and keep it aside.

2. Peel off the skin of mango and cut into bite size pieces. Then grind it to make pulp as shown below in picture.

3. Take another bowl, add powdered sugar, orange essence, butter and mango pulp. Mix it well till sugar dissolves completely.

4. Now add this paste into flour and mix it well. If you need water, add drop by drop of water to make batter consistency. Then add chopped walnut and currants.

5. Grease baking cup with butter and pour the batter into it. Pre-heat oven to 180 C and bake it for 15 minutes. Remove muffins from oven and let it cool for 15 minutes. Muffins are ready Smile.
