Vegetable Taheri Recipe

Here is the recipe for the simple and easy Vegetable Taheri. It’s basically a kind of vegetable pulao. There is no hard and fast rule for using the vegetables, you can put whatever vegetables you like or which are available in your kitchen.

It is one of the most easiest one pot meal you can prepare as a lunch or dinner when you have got less time at hand. It’s definitely worth learning for those times.

Ingredients Quantity
Basmati Rice 2 cup
Onion 2
Tomato 3
Potato 2
Capsicum 1/4 cup
Carrot 1/4 cup
French beans 1/4 cup
Green peas 1/4 cup
Cumin seeds 1 teaspoon
Cinnamon stick 1 inch piece
Bay leaf 1
Cloves 3-4
Cardamom green 1
Black pepper 1/2 teaspoon
Green chili 2
Red chili powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Salt to taste
Curd 1/2 cup
Water 3 cup
Coriander leaves 1/2 bunch chopped

Ingredients for Grinding together:

Onion, roughly chopped 1
Ginger 1/2 inch piece
Garlic 7-8 flakes
Cumin seeds 1 teaspoon
Black pepper 1/2 teaspoon
Cardamom brown 1
Cloves 2

Method:

1. In a grinder, add all the ingredients mentioned in the table above” Ingredients for grinding” and 2-3 tbsp water. Grind it to make a fine paste. Keep it aside.

2. Chop all the vegetables as shown below in the image and keep the spices ready.

3. Heat the wok with 4 tbsp vegetable oil and temper with cumin seeds, cinnamon stick, bay leaf, cloves and black pepper. When the cumin seeds starts crackling, add onion.

4. Add green chili and fry it till the onion is translucent in the color. Add ground spices in the wok.

5. Add red chili powder, turmeric powder and salt. Cook the spices on a medium flame till it shows oil separately.

6. Add Potato, carrot, capsicum, beans and green peas. Cook the vegetables on a medium flame for 3-4 minutes.

7. Add curd and mix it well.

8. Add water and soaked rice in the wok. Add chopped tomato and coriander leaves. Mix it well.

9. Cook covered on a high flame till the water starts boiling then keep the flame low and cook it till the rice is properly cooked.
