This one is the favourite recipe of mine as well as of my family, if you are bored with the regular vegetables, try this mixed version it is completely different from the other veggies. You can get all vegetables taste in one veggies and gives unique flavour to it. It is healthy, nutritious, and easy to prepare, In this version the veggies are boiled not fried. If you are diet conscious it is perfect and goes well with chapatti or rice.
I prepare other vegetables like brinjal bhaji, French beans bhaji, bottle gourd curry, Potato and peas curry, potato spinach bhaji etc. Follow my easy recipe with step by step pictures.

Potato | 2 no’s |
French beans | 250 gram |
Brinjal | 100 gram |
Capsicum | 1 no’s |
Onion | 1 |
Tomato | 2 |
Ginger-garlic paste | 1 teaspoon |
Sabzi Masala Powder | 1 teaspoon |
Red chilli powder | 1/2teaspoon |
Turmeric powder | 1/4 teaspoon |
Salt | As needed |
Oil | 5 teaspoon |
Coriander leaves | 1/2 bunch |
Method:
1. Wash and clean all the vegetables and cut the veggies into small pieces. Take diced vegetables into pressure cooker along with some salt and cook for about 2 –3 whistle. you don’t need to add water while cooking veggies.
2. Heat the oil into wok or kadhai and fry the onions till golden brown in color.
3. Add chopped tomato, sabzi masala powder, red chilli powder, turmeric powder, ginger-garlic paste and cook it for about 5 minutes on medium flame.
4. Then add cooked vegetables into wok and mix it well. Garnish with chopped coriander leaves and serve hot with chapatti or rice.
