Lauki is a common vegetable in Indian kitchen, loved by some, and hated by many, have excellent nutritional benefits. Today, I prepared lauki curry for lunch. It is very light on digestive system. The bottle gourd is low in fat and cholesterol yet high in dietary fibre. Its high water content makes it very cooling. The cooked Bottle Gourd is cooling, calming, diuretic and easy to digest. It is also effective against constipation and other digestive disorders.

|Bottle Gourd||1/2 kg|
|Coriander leaves||1 bunch|
1. Wash and peel the skin of bottle gourd and cut into small pieces as shown below in picture. Chop onion and garlic.
2. Heat the oil in a pressure cooker and fry the onions and garlic till light golden brown. Add Chopped bottle gourd and fry for about 5 minutes.
3. Chop green chilli, tomato and coriander leaves. Add into pressure cooker and salt. Mix well and pressure cook on slow heat for about10 minutes.
4. Vegetable is ready, Serve with chapatti and rice.
