Kadai Mushroom Recipe

Here is the recipe of Kadhai Mushroom, it is very rare that I find people offline who love it, there is only one person I know who loves it, and that is, the Husband.

And then I find people online who are in love with Mushrooms as much as the Husband is. And this is why he convinces me to put this up on the blog every once in a while.

He literally loves everything that has Mushrooms. Every single Mushroom recipe that has ever been posted on the blog was his idea, including this recipe as well.

While I have other ingredients that support this recipe, but flavor is won by the Mushrooms.

You can cook this recipe at home by following the simple and easy step by step process below. I hope you will love it.

Ingredients for Kadai Masala:

Ingredients Quantity
Coriander Seeds (खड़ी धनिया) 1 teaspoon
Dry red chilly (साबुत लाल मिर्च ) 3-4
Cumin seeds (जीरा) 1/2 teaspoon
Cloves (लौंग) 2
Black pepper (काली मिर्च) 7-8
Cardamom brown (बड़ी इलाइची) 1
Mace (जावित्री) 1/4 blade
Cardamom green (छोटी इलाइची) 2

Ingredients for  Gravy:

Oil 3 tbsp. for frying the mushroom plus 3-4 tbsp. for cooking the gravy
Onion 1 chopped and 1 diced
Capsicum cut into 1/2-inch cubes
Tomato cut into 1/2-inch cubes
Mushroom 300
Red chilly powder 1/2 teaspoon
Turmeric powder 1/2 teaspoon
Salt to taste
Tomato puree 1 cup
Coriander leaves for garnish
Ginger-garlic paste 1 teaspoon

Method:

1. Keep all the ingredients ready for Kadai mushroom masala. Dry roast the spices on low flame till nice aroma comes. (it will take around 1-2 minutes)

2. Take the roasted spices in a grinder and grind it to make a fine powder. Keep it aside.

3.Clean, wash and cut the mushroom. Heat the wok with 3 tbsp oil and add mushroom.

4. Fry it till it is light golden in the color. Take out the fried mushroom in a plate.

5. Add remaining oil in the same wok and saute with onion. Fry the onions till it is light golden in the color.

6. Add tomato puree and ginger-garlic paste in the wok. Cook it on medium to low flame till oil shows separately.

7. Then add turmeric powder, red chili powder, and salt. Cook the spices for another 2-3 minutes on a low flame.

8. Add diced onion, capsicum and tomato. Cook for 2-3 minutes on a low flame.

9. Then add fried mushroom in the wok and mix it well with the spices. Check salt according to your taste.

10. Add ground spices (prepared in the step-2)  and 1 cup water in the wok, mix it well.

11. Cook covered on a low flame till the gravy is slightly thick (dry) and mushroom cooked properly. Switch off the flame, Garnish with coriander leaves. Delicious Kadhai mushroom is ready to serve. Serve hot.
