Baingan Bharta is a healthy food, is low in fat and sodium and high in dietary fibre, vitamins C and B6 magnesium, phosphorus and potassium. . I make lots of verities with this vegetable.
This one is favourite in my house. Every region in India has their own version of Baingan Bharta, But here i made my Version of Baingan Bharta, I added tomatoes, green chillies and onions, its gives nutritional flavours in one single dish.

Ingredients | Quantity |
Brinjal /Baingan/eggplant | 250 gram |
Onion | 2 |
Green Chillies | 7 |
Garlic | 5 flakes |
Ginger | 1/2 inch piece |
Tomato | 2 |
Turmeric Powder | 1/4 teaspoon |
Salt | To Taste |
Method:
1. Wash and dice eggplant into cubes.
2. Heat oil in a pan, add chopped garlic, ginger green chillies and onions . Stir for 2 minutes.
3. Add diced eggplant and stir for a minute.
4. Now add tomato, turmeric powder and salt .
5. Cover and cook for 10 Minutes till oil shows separately.
6. Garnish with coriander leaves, Serve Hot with Chapattis or rice.
