Bottle Gourd | 1/2 kg |
Tomato | 1 |
Onion | 1 |
Ginger | 1/2 inch piece |
Garlic | 8-10 cloves |
Cumin seeds | 1 teaspoon |
Cardamom brown | 1 |
Black pepper | 1/2 teaspoon |
Red chilli powder | 1 teaspoon |
Turmeric powder | 1/4 teaspoon |
Salt | as needed |
Fenugreek seeds | 1/4 teaspoon |
Coriander leaves | for garnish |
Oil | 1/2 cup |
Method:
1. Peel off the skin of potato and bottle gourd, and dice in a shape you want. Heat the 3 teaspoon oil into pressure cooker and fry the diced vegetables.
2. Add chopped tomato into cooker and again fry it for about 2-3 minutes or till tomato is mushy.
3. Blend onion, ginger, garlic, cumin seeds, cardamom brown and black pepper along with little water to make fine paste.
4. In the same cooker, add some more oil and sauté with fenugreek seeds and then add ground paste. Add red chilli powder, turmeric powder and salt.
5. Cook the spices on slow heat till oil shows separately. Then add fried Veggies into cooker.
6. Add 1 glass of water or you can add water according the curry consistency you want. Close pressure cooker and cook for about 2 whistle and switch off the flame and let it cool for about 10 minutes.
7. Open cooker and garnish with coriander leaves and serve with hot rice or chapatti.
