This Masala Kaju Bhindi is a little offbeat, a special recipe that can be made on regular days. We usually prepare the onion bhindi which is juicy and crunchy, but on the recommendation friends and family we did this one for people who are not a fan of the crunchy bhindi.

Bhindi/Okra/Ladyfinger | 1/2 kg |
Vegetable oil | 1/4 cup |
Cumin seeds | 1 teaspoon |
Bay leaf | 1 |
Onion | 2 |
Tomato | 3 |
Garlic | 10 flakes |
Ginger | 1/2 inch |
Cashew nuts | 1/4 cup |
Green chilly | 3 |
Cinnamon stick | 1 |
Cardamom green | 2 |
Cloves | 3 |
Cream | 1/4 cup |
Red chilly powder | 1 teaspoon |
Turmeric powder | 1/2 teaspoon |
Coriander powder | 1 teaspoon |
Garam masala powder | 1/2 teaspoon |
Salt | to taste |
Method:
1. Wash and pat dry the bhindi on a towel. Cut the Bhindi into 2-inch pieces.
2. Heat 2 tablespoon oil into a wok and fry bhindi on medium heat for 10 minutes.
3. Take out the bhindi from the wok. In the same wok, add remaining oil and temper with cumin seeds and bay leaf.
4. Add chopped onion and fry it until light golden brown in color. Add tomato, ginger, garlic, green chilly, cardamom green, cashew nuts and cinnamon stick in a grinder and grind it to make the fine paste. You can add 2-3 tablespoon water while grinding.
5. Now add ground paste into a wok and cook it on low to medium heat for about 3-4 minutes or till oil shows separately.
6. Add red chilly powder, turmeric powder, coriander powder, garam masala powder, and salt. Cook the spices on low heat for 2 more minutes.
7. Add a glass of water into the wok and mix it well.
8. Then add fried bhindi into the wok and cook covered on medium flame for 10 minutes or till the gravy is thick. Switch off the flame and add cream. Mix it well, delicious masala Kaju okra is ready to serve. Serve hot with chapatti or rice.
